Fun Fact Friday: About Carrots

I tend to use the orange carrots for an accent color to brighten up a dish. The other carrot colors aren’t quite as appealing to the eye in many dishes, though roasting a variety of them is simply gorgeous, and tasty.

Nevertheless, carrots of any color still provide plenty of nutrients.

What’s your favorite recipe with carrots (any color)?

While I don’t recommend eating on the run, sometimes you just gotta get out the door in the morning or tide yourself over until you can have a decent meal.

Here’s a fun and fairly robust recipe for a quick breakfast or snack that includes a little bit of carrot! Make some this weekend!

“Monster” Breakfast Cookies
(makes 12 servings)

Preheat oven 350 degrees

Wet ingredients:
2 mashed bananas
2 eggs
​1 carrot (grated) = about 1/2 c – to be honest the orange ones look best in this 🙂
1/2 c almond butter
2 tbsp coconut oil
2 tbsp maple syrup

Dry ingredients:
1 1/2 cups oats
1 c almond flour
1/4 c pumpkin seeds
2/3 c organic raisins (optional)
1 tsp cinnamon (optional)

Instructions

  1. Mix wet ingredients in one bowl, dry ingredients in another bowl. Combine wet and dry and mix well.
  2. Using hands, form dough into large cookies (2-3” diameter), place on a baking sheet.
  3. Bake for 25-30 minutes until golden brown.

​Let cool completely before storing or freezing.
